How about "open-world RPGs"? Deus Ex isn't open world, there is not anywhere the level of freedom and random crap you can do than in Skyrim. Likewise, because of its linearity, Deus Ex gives you a more focused and concentrated control over the events in the story, while Skyrim is more general sandbox.
STALKER would be a better comparison to Skyrim than Deus Ex, and even then I wouldn't say it's a good comparison.

Goin' off experience. The first Oblivion demo barely had anything to do with the actual game we got, to name an example.
And yeah, STALKER works as a comparison, though its dialogue is almost purely functional in nature. You rarely get an accurate feel for characters in those games.
