Maybe he wasn't really in shape after being stuffed away for like a year.
So he can fly a broom, do missions for the Order of the Phoenix and fight Death Eaters at the Ministry of Magic, but not sit in a classroom?
He did have significantly more time to readjust himself for those events than to teach Defense immediately starting OotP.
