Problem is the story doesn't really have a single main character to replace Ned, so even if you got a new star actor, there isn't a strong lead role to give them.
If they did find a star actor for just one new role, I'd want it to be Davos or Melisandre over Stannis, actually.
Actually, scratch Melisandre, it's better she's an unknown. Maybe a Greyjoy or a Tyrell, then.
OR: Best solution possible would be to have a celebrity guest in as Qhorin. In that sense, the celebrity wouldn't have to spend more than a season on set, but Jon Snow gets a great actor to bounce off and the series retains its Sean Bean-led buzz.
