Because the first one wasn't terrible. AC2 just makes it look terrible. When AC1 first came out and it was fresh, some of the stuff it did was incredible. AC2 basically does all of that and more so it's better but AC1 can't be overlooked.
I wouldn't call AC1 terrible per se, but when it came out I was still completely underwhelmed. If my little brother hadn't bought AC2 I probably would've never played it because of the first one. Luckily he did and AC2 was glorious. Brotherhood is great too, haven't played the new one yet.
