Well I haven't played GoW3 yet, but in the PSP ones, they focus a lot on guard-and-counter, so it's like Royal Guard in DMC3. That gets old after a while, too, though.
Even in the PSP ones there's plenty of enemies that can break your guard easily. Rolling is usually a lot more effective. And parrying. You don't wanna stand around and guard.
Not unlike Ninja Gaiden, which is purely a defensive style of combat (at least the first most superior game).
