Topic	You're all doing Italian food wrong, say Italians

There's a market near me that sells guanciale (thankfully) that I use in a lot of my pasta dishes Hehe, there is a Long Island style deli right near where I work, I hit them up a lot. But ya, as for me, My Great Grandmother was off the boat, and I was lucky enough to grow up with her. Pretty much everything I cook has a Mediterranean bent to it. The only Oil, is Olive Oil.
