Because writing older people is difficult, they've got so much life experience, and thus act vastly different to young people. Also, if you're an author in your 30s (The average age of an author who achieves bestseller status for the first time in the 2010s is 52, so most will start in their 20s/30s), it's easier to write a character in their 20s, because you can use your memories - quite easily with a little artistic license, the more you write such characters, the better you get at it - thus the more you'll write them. This is the difficulty with writing "immortal" or really old characters - if they act like they're in their 20s, what have you achieved by making them "immortal" except making them appear unrealistic to a lot of people? ...
