The only Tales games I liked were Symphonia, Abyss, and Vesperia. I haven't played any of the older ones, and I didn't bother trying Berseria or Zestiria though.
If you liked those three, you would probably like:
Destiny R was recently fully translated by fans and is a lot of fun, imo.
Innocence R (which fans are working on a translation for). Was shocked at how much I liked this one.
The gameplay of Hearts R (the story is absolute trash but it's a really fun game).
Eternia is of the same vibe as the ones you mentioned though the gameplay is not high-end for the series; it's a sollid installment.
Rebirth (again, fans are working on a translation and I have heard good things about it, though unlike the others I can't personally vouch for it).

And I actually enjoyed Phantasia, though its gameplay is VERY dated. Phantasia does not get enough credit for what it managed to do when it first came out. Impressive little SNES game.

Destiny 2 I am completely unfamiliar with so I can't comment on it, unfortunately. Legendia is an oddball with very high highs and very low lows. I think Phantasia and Legendia could easily benefit the most from being properly remade.

As for the newer stuff... the only one I would recommend quickly but with a few caveats is Berseria. Berseria has some pacing issues, but I think it's the closest the series has come in recent years to capturing the strength of the older games. Arise TRIED, but it was clear that Arise suffered a lot from a lack of proper revision and it is VERY rushed towards the end in a way that really hurts it overall.
