in general: have the steal ability (be a thief), saddle next to an enemy, and the command will pop up if they have something stealable and your speed stat is good enough.

for dark knight: just beat him up. You'll run into him multiple times; the first time he's usually too strong to take down unless you're playing on Casual like a scrub
