Yes, you could always go back and do them after of course, but still. Also the raid series in Stormblood (and ARR) is supposedly going to be pretty important for Stormblood, and the writer has made it pretty clear that she thinks you should make sure you've played it before playing Endwalker. Now, if you take that to heart and JUST do the normal difficulty raid series for Stormblood and the mainline, if you feel you can comfortable do that without skipping cutscenes...yeah you could do it.
