i saw a comment on reddit talking about how if you wrap a potato in foil and bake it, you're actually steaming it, not baking it. it then described a method where you coat the potato in olive oil, salt + pepper and set it directly on the oven rack, making the skin nice and crispy. want to try.

Isnt it better to use foil for the majority of the cooking time and then remove the foil for the last bit to crisp up? Just letting it sit in the oven burns or dries out the potato.
