I could be wrong here, but traditional fried chicken is pieces of actual chicken that have bones and skin. The skin is actually what creates a lot of the crispiness when cooked properly.

This sounds like chunks of boneless skinless white meat that have been breaded and fried. Like when somebody cooks a chicken fried steak, its only the batter on the outside because obviously we dont eat cow skin with red meat.
