Inventory space is my main gripe with the game. After factoring in potions, dyes, materia, fishing lures, and food, you basically only have 1 page left to put stuff, and that itself gets filled up quickly if you're trying to craft stuff.

Potions are borderline useless, you don't need to keep that stuff around unless in very specific cases
Fishing lures/bait and food can be kept on your chocobo saddlebags most of the time
Most dyes are very easy to obtain from vendors/craft so you don't need to keep them on you, only keep dyes that have a green background as those tend to be rarer/more valuable
Most materia is useless, the only ones with real uses are a few specific rank III materia for certain quests, rank VI for people gearing up for ultimates and rank VIII for current end-game gearing
Also keep crafting materials you're not currently using on a retainer
