And 90% of the time it's not "the rich" doing it, it's a certain food catching on and becoming more popular across the population, because the rich can't possibly eat enough to raise prices. Things start off cheap because supply exceeds demand. As soon as the general population gets really into something, that demand skyrockets. For some foods -- like chicken -- factory farming has kept prices low. Anything wild caught or has a lot of requirements will go up in price because supply can't scale to meet demand.
