Depending on how they were done they elevate the flavour and colour of the dish. But actual pickles (ie cucumber)? No. I'm not a cucumber fan no matter its form and don't like it on anything. Least not potatoes. Eggs are another controversial one in potato salad. Like with pickled onions it makes it richer but some people just like it plain.
