To be honest, it exposed me to many ingredients I never would have ever used and spice combinations that never would have crossed my mind. Seasoning jackfruit with taco spices to make tacos that vegans would enjoy. Honey chipotle brussle sprouts that are baked to be crispy and spicy-sweet. Meat is usually the star of the show and I love a nice, properly seasoned slab of meat. Also having to cook for a vegan girlfriend forced me to be creative with flavors and ingredients on a nightly basis. Taking meat out of the equation leaves lots of room for experimentation. Almonds or peanuts are added to the cabbage and olive oil to give a hearty crunch as well as protein.
