You mean cheddar or American. Both melt good but American melts the best, probably of any non soft cheese. I mean that's it's biggest (only) selling point because it has a bad rap.
American has a bad rap because legally it doesn't even qualify as cheese. If you really need something that melts you should just use a soft cheese that actually tastes decent.

Honestly, unless you're working with the equivalent of a super aged parmesan, or a cheese that specifically is designed to not melt like halloumi, you can get pretty much any cheese to melt if you're careful how you do a grilled cheese.
