Dancer is probably the single easiest job to pick up and play, though I wouldn't get discouraged from being overwhelmed by Samurai. I had to look up a few things when I unlocked it recently and while it does click fast it required knowing how melee classes tend to work in this game. They usually have a dps combo and a buff upkeep combo, and SAM is a bit weird because it has 3 combos instead of two.

You're probably reading an outdated guide. Some of them I think USED to do damage but do not anymore.

You really only need to pay attention to a few, besides the two you mentioned, and even those are pretty niche.

Arm's Length: This prevents knockback, and is the physical equivalent to Surecast on casters. You can use it to ignore certain mechanics that push you around. It's also a defensive ability for trash mobs on tanks due to the slow.

Head Graze: Is a silence, which allows you to interrupt enemy cast bars that flash red. Nothing in normal content tends to require this IIRC but you will find occasional uses for it here and there. Only tanks and ranged have silences, melee dps have stuns which are slightly different (enemies can be immune to it) so this is something that's part of those roles.

The other two are a heavy and a bind, which are so much more niche than even the two above they are essentially useless.

Edit: Also there is a secret ranged role action that is more important than literally all of these, and that's the damage mitigation. But instead of a generic role action varient they made it a "unique" job skill for all 3 roles, even though it does the same damn thing and they don't even stack with each other. On Dancer it's called Shield Samba. It reduces damage for the party by 10% for 15 seconds, so you basically use it when there's a big aoe hit incoming.
