There's no "trend" to have a main character who's an adult sound like a kid. It only happened in DBZ because she voiced him while he was a kid in Dragon Ball, and when he grew up in Dragon Ball Z they decided not to change the voice actor.
Luffy, Naruto and Kenshin comes to my mind immediately. All adults who still sounds like a little boy. Sometimes they make villain kids sounds like an adult to make them sound evil(Gaara). It doesn't matter if the character is an adult or not, if the director's vision is to make them sound comedic and geared towards a certain demographic then they will make them sound like however they want. Voice dissonance is a huge trope in Japan and I know it's different from what you're familiar with so it's hard to cope. Stop trying so hard to justify your preference.

We're talking about bad voice acting here and I'm fine with you thinking Goku's Japanese voice is bad. You should be okay with me thinking Vegeta's voice is bad.
