I think I have all of Link's and Lana's and Zelda's extra weapons I believe. I have Linkle's boots and Ganondorf's Trident. I think Toon Link has a sand rod? I'm not sure what else there is.

Do you have the summoning gate for Lana, Great Fairy for Link, Dominion Rod for Zelda?

Click on a character and it'll have a guide for any weapons they can get, like Link
You're correct, those are the only additional weapons for Toon Link, 'dorf, and Linkle.
Lana has 3, Zelda has 3, Link has like 6 plus the master sword, Impa has 2 (and her 2nd, the Naginata, I like way more than the great sword)

Everyone else just has 1
