From what I understand, the hyperventilation works because that uncomfortable "I have to breathe now!" feeling isn't so much due to the dearth of oxygen in your body, but rather the ever-increasing proportion of carbon dioxide. Hyperventilating apparently helps to lower the levels of carbon dioxide in your body so much that it takes longer for those levels to build up to a point where you feel you must breathe, hence you can hold your breath longer.
