Its a hybrid creation. Santa was named after saint Nicholas. He was designed off of odin from the norse cultures of the north. Even his reindeer were based off of slepnir his eight legged horse grandson. His rosie cheeks were based off of drinking in the mead hall.

For the christmas caroling. It was part of the holiday celebrating bauccus were men would go to different houses raising a ruckus for alcohol and food. If none was given they would come in and help themselves and beat/debauch any woman of age who had not bore a child yet.

As far as the rest thank the church for holiday assimilation and people imitating nobles habits
