Yeah, kanji can be a pain when it comes to knowing which reading you should go with.

"Suki" is just for liking something, whether it's a person, an object, a hobby, etc.

"I would like ~" means you want something, so the easiest way to translate that kind of phrase would be use the conjugation on a verb.
