On paper it really is as simple as "burn more calories than you take in"

But finding the right balance where you don't make yourself feel like you're dying is difficult for some people. I started getting a little pudgy a year or two ago and went on a strict diet where I only drank water, had a multivitamin every day, and a few granola bars, while doing small exercises. Lost 10 pounds in a week and got my goal body back but felt fucking awful.
