It's easy to say Bulma because she's rich (thus has less problems overall), the anime exaggerates Chi-Chi's character, and some people still have that hangover that scene right after the Saiyan arc but at the end of the day, they're more or less the only women on Earth that can deal with Saiyans for husbands. No matter how much Chi-Chi may complain Goku doesn't, she let's him do whatever he wants and even when he was dead for 7 years, she never bothered looking for anyone else.

Also anyone still claiming Goku was "tricked" into marriage should just cut it out. Nobody told him he had to take her hand nor did anyone mislead he just blindly agreed to the promise.
