I feel everyone should start with 1&2 to get a proper introduction to Adol and the land of Ys, then you can literally go in any order after that

There's 3 distinct eras of Ys though and one might appeal to you over the other

The first era uses the bump system where there's no attack button and you hit enemies by running into them at an angle to damage them while avoiding damage yourself. Taking them head on will result in Adol taking damage. These games include

Ys I&II
Ys III: Wanderers of Ys
Ys IV: The Dawn of Ys (Japan only but has a fan translation)
Ys IV: Mask of the Sun (Japan only but has a fan translation)

The 2nd era adds an attack button and is more zelda like. It started out kind of rough, but by the end of it you have one of the best games in the series

Ys V: Kefin, The Lost City of Sand (japan only but has a fan translation)
Ys VI: The Ark of Napishtim
Ys: The Oath of Felghana (remake of Ys III)
Ys Origin

The 3rd era is still ongoing. They added a party system and skill systems and cartography and eventually base building as well. The party system you can switch on the fly between 3 characters (and there's usually 7-8 party members total in a game) and they fit into roles based on how they attack (sword, fists, projectile,etc)

Ys: Memories of Celceta (remake of Ys IV)
Ys VIII: Lacrimosa of Dana
Ys IX: Monstrom Nox
