I think the Netflix Castlevania is an interesting take on the character tbh. It's essentially a Bram Stroker Dracula that succeeded, got bored, and then fell in love with a woman.

Another surprisingly good take on Dracula is in Fate Apocrypha, where he is summoned as Vlad the Impaler and resents that history had turned him into a monster when he sees himself as the hero of Wallachia who defended his people against invasion from the Ottoman Empire.
