It has FTL space travel, droids, pew pew lasers, and other staples of soft sci-fi.

Even if it has the force, there's still plenty going on that's clearly sci-fi. In later movies they increased some of the more fantastical elements of the series, but if we just look at the original movie, I feel like you're on pretty thin territory calling it "not sci fi".
