They do a great job with the service and get tipped? That's fine. I do an exceptional job with the meal and have the people saying "Wow!"? They get tipped. So what happens is for the "special of the day", we phone it in and experiment on the staff to make the actually really good meals and concoctions. One time I made a nachos and cheese mix to share around and I had a server ask me one time why I didn't make it a special. I looked at my coworker and we laughed at her. Rule of thumb for cooking: if they're not paying for the knowledge, keep it in your head. No need to make your master richer. Really, they should raise the prices and do away with tipping.
