prob the poc but I thought it was undercooked pork at first. Anyway I like it rarer personally. Looks good other than it lacks a better sear.

Prep meat, marinade if done so, otherwise season and let it get to room temp.

Then I heat a pan up, add neutral oil (not olive oil etc, high temp oil).

When the oil just starts to give a little bit of smoke I add the meat, sear, flip, sear a while, add butter and whatever flavorings like garlic, herbs, chili etc. Baste and feel with my finger for doneness, then let it rest.

yeah, i think the oil isn't hot enough and alluminium pan isn't optimal. cast iron pan should allow more heat on the surface. i do have to buy one someday haha.
