OTOH, I wouldn't use American slices for Welsh Rarebit, but Kraft shredded sharp cheddar will work. I use mozzarella instead of cheese curds in my poutine, and a mix of mozarella, parmesan, provelone, asiago, and cheddar on my pizza.
