Dim sum in particular is hard to just run across unless you go looking for it (how hard that is depends on where you live but generally when you want it, you go somewhere that you know will have it). Certain noodle preparation techniques (like the aforementioned beef chow fun) is also exclusive to the real McCoy. Some places I've been claim to have beef chow fun but I tried it and found that it wasn't genuine. I see. I remember at my office for the Christmas party, Chung used to bring some Chinese food from Chinatown.
