If she was in hormone replacement therapy, mood swings like that aren't terribly uncommon in some people iirc. Does not excuse the behavior entirely but still a potential cause. Mood swings are mainly caused by fluctuating hormones and low estrogen. Theres a lot you can do to prevent mood swings. Regardless, it doesnt excuse the behavior at all.
