Meh, he had his suspicions. It just wasn't after he read an ancient scroll and saw the markings on the ring (after throwing it in the fire) that he was certain.

Hell, at the time Bilbo found the ring it had been missing for nearly 3000 years. It wasn't until after Gollums capture (and release/escape) from Mordor that he started investigating more and going through all the scrolls in Minas Tirith. Even more so because he wasn't the "expert" of their group regarding the Rings of Power. That was Saruman.

<_< And really, the only reason he came back for the ring was because Sauron send out the Ring Wraiths towards the hobbit(like) encampements
