Although it wouldn't

It would.

then how come it hasn't already happened?

Rats have been around for 160 million years.

Cats have been around for about 10,000 years and were only common globally as pets for under 200.

Humans have been around for between 70-250,000 years depending on who you believe. Most conensus is around 200,000

If all it takes is one year of cat free population to get 2100049593948324932 trillion rats eating all food and spreading disease until the human race dies, then how come the human race exists at all? Why didn't the ratapcolasypse happen millions of years ago?

And this was back in the days where people really didn't understand concepts like disease or ecosystems.

Why did rats only suddenly become a threat to the planet the moment domesticated cats became common?

You're literally being fooled by a Youtube video.
