I think what it is is when you play the PS1 versions there were a bunch of flaws that you just kinda come to appreciate. Like how crash moves and sometimes bounces after landing with his spin and wonky hitboxes qnd stuff like that. Theres a certain charm to it and it's removed when it gets polished.
