That could be hard. Especially since you may not get late customers everyday. One night, you may get late customers that stay for an hour after you close. And another night may have the last customers leave before closing time. They should just have regular hours where they are paid for the time they are there. And they just get more hours (which is more money) in the end...

This would probably be a good idea. Though, then people get mad when a place says it's open, but they won't serve them.
