If they found someone who had been killed and eaten, and were interviewing potential suspects and talking about how someone had desecrated a body by eating parts of it, if one of the suspects said something along the lines of "I would never kill and eat someone" even though the police had never mentioned killing anyone, just eating human flesh, they very much would be more suspicious of that person.

Not trying to pick sides here, but that would be jumping into conclusions based on almost nothing, because the person being interrogated would link the dots on their mind and think "for someone to be eaten, they must've died beforehand".
