Warning, what I am about to say are facts that might make people rage so read with caution.

A combination of things. Hollywood brainwashed them to the core. Hollywood portrays Asian men as weak, nerdy and emasculate them. It's super rare to see an alpha full Asian male as a lead character in movies and TV shows that's because the people in control do that on purpose. It doesn't matter if the Asian male actors can act. Positive, non stereotypical, huge roles for Asian males=bad for white man. That along with white man with Asian females in movies shown positively gives Asian females some kind of power/confidence in the Western world. They are so brainwashed that they think dating Asian men is like dating a relative as one of their excuses not dating Asian men.

White and black men are on top of the food chain in Western countries while Asian men are seen as at the bottom thanks to a lot of things including brainwashing people to believe that. Asian women thinking "why be at the bottom when I can be at the top".

This doesn't apply to all Asian women but it seems like 90% of those dating non Asian men hate their own culture, are embarrassed to be associated with them. Probably something happened in their childhood like 1st gen parents actually having standards and be a little bit more harsh on them on schooling so they cry and hate their parents, especially the fathers, for it. Since they were born and or raised in western countries they want to relate more to western culture.

Asian women seems to be the most self hating women compared to other women of different races/ethnicitys in interracial relationships. Talking shit about Asian men unprovoked. They want to justify their relationship with non Asian men so they do it in negative ways and talk shit about Asian men to make them seen like they're the problem. If you want to date non Asian so be it, don't be disgusting self hating people trying to justify their relationship with attacks on Asian men.

White people still see Asia/Asians as the enemy with wars that happened not too long ago involving Japan, Korea, Vietnam and now China being a threat. A lot of Asian war brides were brought over. The racists white men are thinking like "now we own Asian women" and the toxic culture was born from that hatred.

Asian guys are doing ok for themselves though just look up "AMWF" on social media, youtube, etc. as well as Asian guys with Asian girls who are still the majority

With everything said, I don't hate Asian women with all of the things that are happening. They are in Western countries trying to fit in and white and black men are on top of the food chain. Western culture is the dominant one, not Asian culture. They just need to be happy with themselves and not do the dirty work for white men and attack Asian males.
