Those. Fuck OP's aversion to PC gaming. You can't really separate it from console gaming in terms of influence, especially nowadays when many traditionally PC-centric genres are popular on consoles.
Ultima Underworld basically influenced "immersive sims" (and other games), from System Shock / 2 to Deus Ex to BioShock to The Elder Scrolls (and arguably BotW, at least indirectly), and many others.
