Isn't that one of the main criticisms? There is absolutely nothing tying the stories together, not even any interaction between the different characters, even though they're fighting together. That feels like it would put a huge damper on any enjoyment I get out of playing an individual story.

I've read mixed things on that. Some people who have the game say that your party chats with each other and there are overlapping stories. I don't know what's accurate though.

Is there at least some sort of "final chapter" way at the end that unlocks when you beat all 8 previous stories? Anything like that?

No idea. I would hope so, seems like a real missed opportunity if not.
