Rian Johnson wouldn't defend TLJ by claiming he was intentionally subverting audience expectations if there wasn't some expectation that Snoke would be expounded upon. He only showed up in TFA as a 50 foot shadowy hologram. People watched that movie and expected Snoke to be some big shot in the next two. I don't think most people thought Snoke would die in the manner that he did, but that's different than the first movie hinting that we'd learn his backstory or something dumb like that.
