A sour is a gose not a lambic. And you were just drinking a gose the other day?


No, I was not drinking them. Second, all American sours are modeled after Belgium lambics. Goses are of German origin and are salty compared to sours or lambics.

Lambics (sours in America) are made thorough spontaneous fermentation (various random yeasts and bacteria although many American brewers use more controlled methods which is why Belgium brewers have ask them to not call them lambics) while goses are top fermented ales made with brewers yeast and lactobacillus bacteria. Goses most likely had similar origins as lambics but are no longer made like true lambics. Only in America, are goses a salty off-shoot of sours.
