That's just not true. Some do and some don't. My girlfriend is a high ranking employee at a dental school and there is a dress code there. In fact there's 2 dress codes. One for the classroom and one for the clinic. Obviously most schools don't have a strictly followed code, but I guarantee even those universities have some policy in writing.
