One thing i would keep in mind is strange didn't see all outcomes... Just a lot of them. Likely he checked a hell of a lot of brute force methods first. Give stone to Thanos and have stark alive were not exactly high priorities to him. I mean, yes he knows how they win, that doesn't make it the only way, just the only way he came up with. But you only need one.

Also Thor being able to beat him is not necessarily true. Or even if he can, you still have a very intact infinity gauntlet just sitting there. Maybe things go bad or worse if that is still out there(the current exploded status of the gauntlet feels important).
