You don't need to skin animals to get extra ammo. It's not an linear as the other games. But I really can't remember 4 that well. The air dropping whenever is cool. And actually helicopters and planes you can fly. The GFH & FFH are cool. And I think implemented better than 4, IIRC. And they all have abilities. And those can be very helpful... There are some other things, too... As for the ammo, I never have a problem. I mainly use bow and arrows. And you can get your arrows(the regular ones) back. I also have a shotgun, sniper rifle, and pistol(sidearm). I find shotgun shells a lot. Sniper rifle isn't too hard. I barely use it, but never have ammo trouble with it.
