Personally I don't eat red meat because of the environmental impact and health risks, so you're preaching to the choir on that one.
But let's not pretend like soy is innocent since it's legit one of the most offensive farmed vegetables from a conservational impact deeper being heralded as the answer to all your protein needs by most vegetarians. It's not as bad, but it's pretty close to having as negative of an effect on the environment as cattle production for meat.

IMO if you actually do care about the environment (which plenty of vegans say they do but really don't) poultry and fish are probably the most sustainable diet cornerstones.
