He is not defending the accused, he is defending the legal system and ensuring it is working as intended. If the accused is acquitted despite the mounting evidence against him, this could only mean the prosecutor did a bad job and will be compelled to do a better job in the future. It's kinda like the Sith's rule of 2. Both sides are constantly trying to gain an advantage over each other so they are always improving.
