It seems like I could get away with just two, if that because I have a bunch of female servants so I could just get their CEs and equip them when needed. The Mash CE helps if you get enemies that don't fit the rate up, which does happen sometimes. I got Euryale twice during the Lancer rate up, so she obviously dropped Archer coins. The 40 AP bosses also sometimes drop coins that can be traded in for any class coin (or Jeanne's CE) in addition to their class coin.
