I've seen people regard the Satellaview version of Zelda as a remake, but I've also seen gameplay video of it that looks like a fairly different game (kind of like a "third quest").

There were multiple Satellaview Zeldas; was this the one you were looking at?

The Mario Advance/All-Stars versions were just enhanced ports, I think,

They literally remade the games from scratch, though they are extremely similar in gameplay and level design to the NES originals.

But yeah, I think Nintendo generally isn't too interested in full-on remakes as opposed to ports, since a remake would take just as much investment as an original game, while a port is a substantially cheaper and less risky investment (though it should be noted Nintendo generally puts a lot of effort into updating their ports).
